Work Schedule: Various Hours/Various Days, Including Holidays, Weekends, and some Overtime may be required.  

Performs skilled food service and lead worker responsibilities in an institutional setting, involving the preparation of a large volume and variety of food in Department of Corrections’ juvenile facilities. 

  • Food Services Management - Coordinates, evaluates and plans menus; reviews inventories, purchasing practices, previous menus and recipes. Adjusts menus giving consideration to foods in season and items that are considered a “good buy”, modifies menus to reduce sugar, fats and salt. Monitors costs and considers convenience food alternatives.  Orders groceries and supply items to ensure needs of the Food Service Unit are met; orders perishable items, fresh fruits, vegetables, meats, dairy products, and bread items for delivery. Stores items properly to prevent spoilage; rotates items for freshness.  Prepares dietary and food supply records and reports. Processes and files all invoices according to month purchased; updates current prices with previous ones and notes changes on inventory sheets. Obtains and files product analysis sheets or child nutrition labels for all engineered products used in meals.
  • Quality Assurance - Prepares standard recipes; tests cooked foods to determine if properly cooked, to include temperatures and seasoning. Calculates menus according to child nutrition guidelines, and plans and prepares quantities that will serve meal requirements; records calculations on production record sheets and documents quantities of food prepared for the number of clients and staff. Coordinates with kitchen staff in order to have meals ready to serve at scheduled times; participates and leads in skilled cooking activities as needed. Monitors facilities to ensure safety and sanitation of the work environment and prepares reports regarding the same. 
  • Lead worker - Provides lead worker supervision to food services staff during the preparation and serving of a variety of foods. Oversees and participates in the preparation, cooking and serving of food; prepares food and supply orders three (3) times per week, interviews and makes hiring recommendations for staff; plans, schedules, and assigns work to staff; establishes priorities; instructs and trains in correct methods; checks and approves work; observes and documents employee performance.  Plans work schedules; ensures that personnel are properly uniformed and maintain proper standards of personal cleanliness and kitchen sanitation. Ensures that staff are trained and evaluated on their knowledge of and adherence to compliance policies and procedures specific to their jobs.

Minimum Qualifications: High school diploma or equivalent.  Transcript verifying education credits is required. Three years of experience in institutional or large volume cooking, including supervisory experience.  Professional references are required to verify the related work experience. Food Handler’s Certification – Sedgwick County Environmental Health Department. Pass legal background check, Child and Adult Abuse & Neglect Central Registry checks, KCJIS Security Policy (fingerprint) check, and pre-employment screen for alcohol and drugs.  Must also meet the required conditions contained in KSA 65-516 and KAR 28-4-356.
